Baked Oatmeal Nuggets

Ingredients2-3 ripe bananas4-6 pitted dates1 flax egg (1 tablespoon flax, 2 tablespoon water - let sit for 5 minutes)3 cups rolled oats, divided1/3 cup chocolate chips1 tablespoon vanilla extract1 tablespoon virgin coconut oil2 tablespoons maple syrup1 teaspoon baking powder1 teaspoon cinnamonMethodPreheat oven to 350°FUsing a blender / food processor pulse 1.5 cups of rolled oats into flour like consistency. Place in a large bowl with the other 1.5 cups of oats. Add baking powder and cinnamon.Using the blender, pulse bananas and dates until creamy. Add flax egg, vanilla, coconut oil and maple syrup. Pulse for another few seconds.Add wet mix into bowl with dry ingredients - mix well then fold in chocolate chips.Line a baking sheet with parchment paper. Using a small ice cream scoop, add a scoop of the batter to the sheet.Do not flatten batter.Bake for 7 mins, then rotate baking sheet - bake foranother 5-6 minutes, until done.TipsStore in air tight container for up to 1 week.For some variety, use honey instead of maple syrup. Try other spices (nutmeg, allspice) or add hemp hearts or other nuts.Recipe yields 16-20 nuggets.
