Baked Oatmeal Nuggets

2-3 ripe bananas
4-6 pitted dates
1 flax egg (1 tablespoon flax, 2 tablespoon water - let sit for 5 minutes)
3 cups rolled oats, divided
1/3 cup chocolate chips
1 tablespoon vanilla extract
1 tablespoon virgin coconut oil
2 tablespoons maple syrup
1 teaspoon baking powder
1 teaspoon cinnamon
Preheat oven to 350°F 
Using a blender / food processor pulse 1.5 cups of rolled oats into flour like consistency. Place in a large bowl with the other 1.5 cups of oats. Add baking powder and cinnamon.
Using the blender, pulse bananas and dates until creamy. Add flax egg, vanilla, coconut oil and maple syrup. Pulse for another few seconds.
Add wet mix into bowl with dry ingredients - mix well then fold in chocolate chips.
Line a baking sheet with parchment paper. Using a small ice cream scoop, add a scoop of the batter to the sheet.
Do not flatten batter.
Bake for 7 mins, then rotate baking sheet - bake for
another 5-6 minutes, until done.
Store in air tight container for up to 1 week.
For some variety, use honey instead of maple syrup. Try other spices (nutmeg, allspice) or add hemp hearts or other nuts.
Recipe yields 16-20 nuggets.
